Recipe: Peanut Butter Krispie Balls

January 24th is National Peanut Butter Day.  Who knew, right?  I’m not sure who decides these things but we love peanut butter around here.  In fact, it’s pretty much it’s own food group so we are more than happy to celebrate.

This recipe has been around since my little brother took Home Ec in middle school.  It was the easiest recipe for us to make on our own without the supervision of our mom.  It was always a favorite for us and now is a favorite for my kids.  I’ve cleaned it up a bit because it originally had corn syrup in it.

PEANUT BUTTER KRISPIE BALLS
Ingredients:
1/4 cup sugar
1/4 cup honey
1/4 cup peanut butter
1/4 tsp vanilla
1 1/2 cups of a rice cereal, like Rice Krispies.

Directions:
1.  Measure and prepare all ingredients before starting and place the rice cereal in a separate bowl.  (Once this recipe begins, it’ll be done rather quickly.)

2.  Put the sugar and honey in a medium sized saucepan and stir over medium heat.  Continue to stir slowly until it comes to a rolling boil.

3.  Remove the pan from the stove and mix in the peanut butter and vanilla until it has all melted.

It will be very smooth.

4.  Pour the peanut butter mixture into the rice cereal and mix until the cereal is all coated.

 

5.  Using a scooper or a tablespoon, scoop out a ball of the Peanut Butter Krispies.  Roll it between your hands to pack it together.  It’ll be a little hot but if you don’t do this step, they’ll fall apart.  Then place it on a sheet of wax paper to cool.
6.  Cool and hide them from your family serve!

This recipe only makes about 12 when you use a large scooper (I use the Pampered Chef one).  You may want to start out making a double batch or use a smaller scooper.  Rebecca is perfect age (4.5 years old) to help make this recipe.  She helps to measure the ingredients.  She was able to do some of the stirring at the stove and was able to take the balls and roll them between her hands after I scooped them out for her.
