Recipe: Apple Oatmeal Crisp

I found myself with some extra apples the other day and wasn’t sure what to do with them.  We normally eat a ton of apples but apparently since I didn’t buy Gala, the girls deemed them yucky and they’ve gone uneaten.

I know it’s not the fall (and I am certainly not wishing for it to be) but I decided to make Apple Crisp with them.  For this recipe you can pretty much use any kind of apples but I usually use Macintosh.
This is a great dessert that isn’t too heavy and is perfect even in the summer time when it’s warmed up and served with some vanilla ice cream.

 

Ingredients:
8 apples, peeled and chopped into small cubes
1/2 c butter
1 c sugar
1 Tbsp (or more) of cinnamon
3/4 c flour (or gluten free flour)
1 c rolled oats (we use gluten free oatmeal)
Directions:
1. Preheat oven to 375*
2. Place the apple pieces in the bottom of an 8×8, 9×9, or a round cake pan.

3. In a bowl, place softened butter, sugar, cinnamon, flour, and oatmeal with a spoon and then your hands.

Using your hands will help to ensure it is mixed thoroughly, even though your hands will get pretty dirty.

 

4. Place the mixture on top of the apples and press it down into the pan so it is firmly packed.

 

5. Bake at 375* for 40-45 minutes or until golden brown.
6. Serve warm with some vanilla ice cream.
