This recipe is so good that she makes it all year long because we all keep requesting it. She frequently makes loaves at a time and puts them in the freezer to save for later. We actually got a freezer loaf this afternoon. It’s on my counter defrosting and we’ll eat it for breakfast tomorrow.
She gave me her blessing to share the recipe so you can all have some of this pumpkin goodness in your bellies by tomorrow.
PUMPKIN BREAD
Ingredients:
1c pumpkin (not pumpkin pie filling)
1c oil
4 eggs
3c sugar
1/2 tsp salt
3c flour
2tsp baking soda
1 tsp cinnamon (I add 2 tsp when I make it)
2/3c water
Directions:
1. Mix sugar, eggs, cinnamon, salt, and oil together.
2. Add pumpkin and water.
3. Mix baking soda in flour and add last.
4. Bake at 350* in greased & floured pans for 50 minutes. Depending on your oven, it may take longer. I’ve already had a loaf take an hour. Stick a toothpick or a knife in the loaf and when it comes out clean, you’ll know it’s done.
This recipe makes 2 large loaves or 5 mini loaves.
