Recipe: Burrito Bowls

I am in love with Chipolte’s burrito bowls.  They’re amazing and full of so many good fresh ingredients.      Do you have a Chipolte near you?  We have 1.  And I like to go there.  A lot.
Since it’s not realistic to eat there every day (because I could totally eat burrito bowls every day), we usually make them once a week or once every two weeks.  I love making them for 2 reasons.  
1.  They’re so easy to make.  I cook a whole chicken in the crock pot, shred the chicken, and then serve it on the table.  You could also cook chicken breasts and shred it this way.  We serve it with 
  • shredded cheddar cheese
  • black beans
  • shredded lettuce
  • salsa
  • sour cream
  • brown rice
2.  They’re perfect for allowing the kids to take an invested interest in what they’re eating.  I allow them to make their own – much like the way we allow them to make their own tacos.  They add whatever ingredients into their bowl that they want to.  Sometimes it tends to be more cheese and black beans than anything else, but as long as they’re getting some protein, I’m happy.
