People always tell me that they love my chocolate chip cookie recipe. It IS good so I’m not surprised. However, when we had to go gluten free, it didn’t taste as good with gluten free flour or Cup 4 Cup.
You all know how much I love baking and cooking from scratch, so a pre-made cookie wasn’t going to cut it. I’ve adapted a different recipe that is gluten free and delicious.
Here’s our new favorite cookie, which is still delicious even when it is made with regular gluten filled flour:
GLUTEN FREE CHOCOLATE CHIP COOKIES
Ingredients:
1 cup brown sugar, packed
1 cup granulated sugar
1 cup butter (2 sticks), softened
2 eggs
1 1/2 teaspoons vanilla
1 teaspoon salt
1 teaspoon baking soda
3 cups of Cup4Cup gluten free flour (or regular all-purpose flout if you are making this with gluten)
2 cups of chocolate chips (I use milk chocolate)
Directions:
1. Preheat oven to 375*.
2. Place brown sugar, granulated sugar, butter, eggs, and vanilla into a mixer bowl until a minute or so after it’s well-mixed.
3. Slowly add salt, baking soda, and Cup4Cup flour.
4. Once everything is well-mixed, add the chocolate chips.
5. Scoop onto a baking sheet covered with parchment paper.
6. Bake for 10-13 minutes or until the edges begin to brown.

To make the heart shaped cookies above, I used a 9″ round cake pan. I lightly buttered the pan first, and then placed the cookie dough in it.
The recipe above is perfect for 2 pans. I occasionally half the recipe and make just one cake pan.
In the cake pan, I bake it for 18 minutes. Keep an eye on it because your oven could vary from mine. You’ll want to take it out of the oven when the edges start to lift away from the pan and the center is browned.
Then I took a small Pampered Chef heart cookie cutter and cut out the dough in the inside of the pan.
I was able to get enough to fill 2 small boxes. The girls (and Matt) were more than happy to eat the outside edges. Today I’ll be mailing one of the boxes out and I’ll be dropping the other off in a mailbox as part of my continuation of #RAK.
